Effect of dietary erythritol supplemented with chitosan, extracts of Akebia and extracts of Ishige on the growth of mutans streptococci



Abstract
Sucrose is the most cariogenic of all sugars because of its unusual biochemical properties and may play a more dorminant role in the development of smooth-surface caries than does in fissure caries because its metabolic by-products includes extracellular polysaccharide, which greately increase the adherence of cariogenic mutans streptococci to smooth enamel surfaces.
Erythritol is sugar alcohols(polyols) which are caloric or nutritive sugar substitutes. And it can be metabolized to yield energy; therefore, they add to the bulk of food product.
In this study, we tested the growth inhibition of caries-causative mutans streptococci with sugar substitutes, erythritol compared to sucrose in vitro. The results are as follows.
1. With regard to the effect of erythritol on bacterial growth, their influence was found to be 50% growth inhibition ability(1000tig/ml) compared to sucrose.
2. Effect of substitute of sucrose with erythritol have 45-60% range of growth inhibition and mixture of erythritol with other natural products have more elavated effect which showed 82-94% growth inhibition on mutans streptococci.
